The tomato is the most widely consumed vegetable in Europe. It has a high nutritional value and is thus one of the mains sources of vitamins and minerals for humans. The main component of the tomato is what is called "lycopen", an active ingredient belonging to the carotinoid family and which gives the tomato its typical red colour and antioxidant properties for the organism, making it highly beneficial to health.
